You'll not find (m)any fans here of S brand beds, that includes S&F.
I agree with pianoman. If you buy an S brand you'll end up needing to buy a new bed soon OR do mattress surgery on it, so either buy a cheap spring bed knowing you're going to do surgery on it (that's the way to go if you don't think you'll like an all-foam mattress, like me) or make a DoItYourself all-foam mattress from either all latex, latex+PU or latex+memory foam.

p.s. If you and your girlfriend are the type that have no back or joint issues and can "sleep on anything" then maybe the S&F will work for you. In general, S Co mattresses are just not...

Mike is correct. Sealy does not make a 100% Talalay latex mattress. Do not take a salesman's word for the contents of a mattress, EVER. What you need to do is look at the contents TAG on the mattress. If you do, you will see the contents of the mattress and you will see it is not 100% latex.
From the Sealy website, three lines of mattresses containing latex, none of them 100% latex:
Sealy brand latex foam - has a PU core
Embody by Sealy Latex Foam - latex and memory foam
Stearns & Foster Limited Edition Silver Dream - 2 inches of latex
Stearns & Foster Limited Edition Golden Elegance - a full three inches of latex!

The cheap PU foam in the pillowtops is what breaks down after several years and creates problems in the S-brand mattresses. Consider switching to the S&F Firm w/out the pillowtop and adding a 2" soft latex topper for comfort.
No strong opinion here.

I quickly realized that getting a euro pillowtop will be a very bad idea for me very quickly.
I have read some of the members experience on here with memory foam and latex but
I need some help on deciding which one would be the one for me from foambymail.
The memory foam matress that I would get from them is:

I've recently discovered this forum after purchasing this mattress from Macys after trying a lot of beds they had.
From trying the different beds that were at Macys. For the beds within my limited price range, this bed seemed to be by far the most comfortable for me.
I'm in my early 20's (180/lbs/with some arch) and my 15 year old mattress springs are making sounds when I'm sitting down while my back is starting to hurt.
