So, you have more back pain without the memory foam than with it? Does it feel too firm with the memory foam or do you feel like your hips are sinking in too much? You may want to try with just the memory foam and the mattress pad (no eggcrate) to see what that is like. I would not go with more than 3" of the memory foam you have. I am probably going to return the 2.5" of memory foam I have because it is too soft for my weight. In part if may be due to the way the foam is made. I am pretty sure I would not have a problem with 2.5" of Tempur-pedic foam.
So, I don't think I would buy anymore memory foam unless you plan to ditch the 3" you...

This is the wool topper I bought at walmart.com. I can't remember who makes it, but it seems okay. They say 1.5", but I think more like 1". They also have a 3" one is you are looking for something thicker and more of a breathable barrier. I think you can return things if purchased on the walmart website, and they might have free shipping to a store near you.
I have not tried any others to really say how it compares. I was also looking at the Gaiim (pretty good price and I think returnable) and Natura. It is possible that the walmart one is a bit less flexible than the others, so it might affect the...

My wife and I purchased a Queen 12" memory foam mattress from Dynasty Mattress on amazon.com, we just have it on the floor for now.
Our 16 month old daughter will sleep in our bed on occasion, so we bought a waterproof mattress cover from Walmart to protect it. It made the mattress very stiff and slept extremely hot, so we pulled that off so we could at least enjoy our new mattress, knowing full well what would eventually happen. Well the inevitable happened last night, our daughter fell asleep in our bed and overflowed her diaper.

If you are closer to one of the extremes you will find a poorer performing mattress.

A couple of suggestions though to make it less tiresome ... and more "accurate".
First, I would use your experience at Sleepy's (and one or two other places) as a testing ground only. If you lay on a mattress that is too firm, then by knowing the stats of what you lay on you would be much closer to knowing what you need. This is why the latex bliss experience is helpful ... not because I would consider buying it. Make the first part of your search about knowing what fits you ... not deciding what to buy.
Second, make a list of several places that look promising and then call them first. Ask them some...

It seems to me that if you look at all the experiences here, there are really 5 main components to getting to "your" best decision.
These are 1. Initial feel, 2. comfort and pressure relief, 3. Spinal alignment and support, 4. quality and durability and 5. Price and value.
