After reading this forum, I've decided I agree with the concept of buying a good mattress without any pillow top and soften it with a  Latex topper. I am 6ft 3in and weigh 250lbs and typically sleep on my side. I have tested various Simmons and Sealy beds at Macy's and have no real preference but do find the latex toppers I have layed on to be very comfortable. I do though only have $1500 to spend and would welcome any recommendations on what mattress/topper combination would be a good fit for me.
